Chowder Time!
Baby, it’s cooooold outside!
I’ve been freezing my buns off around here lately. So the warm comfort foods have been taking over the kitchen. One of my favorites is some yummy corn chowder. I have a few recipes from cookbooks or given to me from friends, but sometimes I like to play with my food. The last time I made a pot I mixed and matched from several recipes to see what I could make. Most of the ingredients ar the same, but playing with quantities changes the flavor with each dish. I thought I would share what I finally came up with. Make a big pot of this then curl up on the couch with a bowl, some warm homemade bread, and a few good books. There is no better way to pass the winter.
- 1 1/2 cups frozen whole kernal corn
- 1 medium onion, chopped
- 1 clove garlic, minced
- 1 small green (or red) bell pepper, chopped
- 2 potatoes, cubed
- 1 1/2 cups milk
- 1/2 cup grated cheese
- 1 tablespoon butter
- 2 teaspoons flour
- 1 cup water
Saute onion, garlic and pepper in a saucepan for 5 minutes. Add potatoes and water, heat to boiling then reduce to simmer. Cover and let simmer until potatoes are tender. Add corn, cheese and milk. Stir in butter and flour until well blnded. Cook uncovered over low heat for 20 minutes, stirring occasionally until soup is thick enough to your liking. Enjoy!

Oooo, I actually have all the ingredients on hand (except the bell pepper, but the kids wouldn’t eat it anyway) and I was wondering what I could make for dinner tonight. Thanks!
